Southern comfort food and barbecue run hand in hand. This menu is great combined with anything from our BBQ Menu as well.
Appetizers |
Pimento Cheese Texas Toast Bites |
|
Texas-style toast with garlic butter browned on both sides, topped with our slightly spicy pimento cheese and our candied hot link. If you want vegetarian, we can leave off the candied hot link. It's delicious either way! |
Pimento Cheese Dip |
|
Our slightly spicy pimento cheese is a great dip/spread when served with carrots, celery, and crackers! |
Cold Shrimp Dip |
|
Shrimp, cream cheese, green onions, herbs and spices come together for this dip. It's great with vegetables or on crackers. We can make it with crawfish when it's in season. |
Mississippi Hot Caviar Dip |
|
Beans, peppers, onion and chilis come together in a our homemade Italian dressing. Served with corn chips, this dip is always a crowd favorite. |
Southern Creole Fried Chicken Nugget Skewers with Pecan-Honey Glaze |

Chicken nuggets, with a hint of creole seasoning, are fried to a golden brown and drizzled Pecan-Honey glaze. Ask for honey mustard on the side for dipping these tasty nuggets.

Smoked sausage, chicken and shrimp are cooked to perfection with onions, bell peppers, celery and spices and served over white rice.

Oven roasted pork loin smothered in sausage gravy.

Southern Creole Chicken |

Oven roasted chicken thighs in our creole seasoning is delicious.

Slow Smoked Pulled Pork |

Slow smoked pork shoulder is cooked until the bone falls out and the meat is moist and tender. It doesn't get much more Southern than this! |

Smoked hot links are prepared with roasted onions seasoned with cajun spices and beer. |

Sides |
New Orleans-Style Red Beans and Rice |
|
Made with Camellia's red beans, these beans are made with Andouille sausage, smoked ham hock and pickled pork in the true New-Oreleans style. These can be served over rice or made with the rice mixed in. If you already have rice on the menu, we can even leave the rice out.

Hoppin John |
|
Black-eyed peas are fixed with onions, red pepper, and bacon. We can make this vegetarian or vegan if needed, but we would hate to leave out the bacon. |
Canided Yams |

Sweet potatoes roasted with butter and brown sugar to make a sweet and wonderful glaze for the perfectly cooked potatoes. |
Roasted Sweet Potatoes |

Sweet potatoes roasted in olive oil, salt and pepper for a healthier version of our candied yams. |
Collard Greens w/Ham Hocks |

Fresh Collard Greens are slow cooked with ham hocks for a deep, pickled pork, chicken stock and vinegar for wonderful, traditional flavor. |
7 Cheese Macaroni & Cheese |

This is not your momma's Mac & Cheese. Ours sports 7 cheeses, white wine and some other secret ingredients to make it the Ultimate in Mac & Cheese! |

What could be more Southern than good ol' macaroni and cheese as a side dish? This version uses 3 cheeses and white wine but is a little more budget friendly. |

Sweet corn cooked an a cream sauce that is rich and decadent. |
Wild Rice Succotash |

Wild rice and vegetables like corn, lima beans, onions, garlic, tomatoes, and red and green peppers make this a wonderful dish. |
Coleslaw |

A blend of cabbages and carrots with our homemade coleslaw dressing. |
Potato Salad |

A blend of potatoes, celery, and chopped egg go perfectly with any of our slow-smoked meats. |

Desserts |
Apple-Cinnamon Bread Pudding with Bourbon Sauce |
|
Nutmeg, cinnamon, vanilla, raisins or dried cranberries, pecans, and apples make this bread pudding unlike any other. Top it with Bourbon Sauce and you'll think you've died and gone to heaven! It's somewhere between an apple pie and a cinnamon roll.

Bananas Foster Bread Pudding |

Nutmeg, cinnamon and vanilla come together with a rich custard and bananas to make this bread pudding. Topped with rum sauce and you'll never know you aren't in New Orleans sitting at Brennan's. |
Fruit Cobbler |

Taking seasonal fruits, combine them with our cobbler batter for this baked dessert. Served with a dollop with whipped cream on top. |
Fruit Crumble |
|
Seasonal fruits come together for this baked dessert. Topped oats, butter, sugar and flour the crumble is a nice crunch contrast to the soft fruit. We can make this vegan and gluten free as well. |
Instead of giving you cookie cutter menus, we like to work with you to develop menus that "cater to your needs". The menu choices are only "suggested" samples.
