Special requests available. The dishes found here were developed by our chef. Most of them came from the chef's love of the ingredients that inspired her. A few of the recipes are variations from other sources. They constantly get rave reviews. These dishes are located on some of our other menu selections as well. Gorgonzola Cheese Crostini topped with caramelized Apple-Onion & Pecan Compote
This is fantastic drizzled with our vanilla-fig balsamic reduction! Granished with fresh Thyme leaves.
Roasted Shrimp Bites with Mango Salsa
Roasted shrimp in our special rub is chopped and placed in a Tortilla cup with a dollop of Mango Salsa. (Other fresh fruits can be used the mangos are not available.)

From traditional, curried with bacon, and salmon with dill, these deviled eggs are packed with flavor. And with this assortment, your guests will find at least one they love!
Lil' Smokies wrapped in bacon topped with brown sugar and baked until golden brown.
Cranberry Chicken Bites
Rye toast topped with our horseradish and cream cheese spread, tender, moist sliced chicken and a dollop of our shallot, port cranberry compote with a light sprinkle of finishing salt. We can make this Gluten-Free as well.
Crab Puffs on Dill Toast
Crab meat mixed with dill and cream cheese served on toast and heated under the broiler until golden brown. It's crab! How could it not be great?
Cremini mushrooms marinated in sherry and stuffed with more mushrooms, sausage, herbs and cheese. This can be made in a vegetarian or vegan version as well.

Tender tri-tip sliced thin. Rolled with blue cheese crumbles and mushrooms and shallots cooked with cognac, thyme, sage, and garlic.
Choose between our Maple-Bourbon Glazed Salmon or our Dill Glazed Salmon with a hint of Asian flavor. Either will convert the salmon hater into a salmon lover!
Pork Loin Stuffed with Apple Dressing, Smoked Mozzarella and Sausage
Wonderful flavors abound in this pork dish: apples, onions, cranberries in the stuffing are a perfect compliment to the tender pork.
Port-PearGinger Glazed Pork Loin with Caramelized Onions and Pears
We sear the pork loins, coat them with dijon mustard and then finish with our homemade port-pear-ginger jam glaze. It's served on cartelized onions and pears. When pears aren't in season, we use apples.

Tender lamb marinated in a rosemary-mint pesto.

Tender filet mignon seared with a garlic herb blend. Marinated overnight, cooked to perfection and topped with a cognac, red wine, currant and mushroom sauce.

Tender tri-tip cooked to perfection. Topped with our rich port wine and mushroom sauce.
Brined Turkey or Chicken
Choose either Turkey or Chicken. We brine our birds in our special house brine and then roast them to golden perfect. Moist and Flavorful!
Lemon, Fennel and Rosemary Chicken
We create a rub with lemon zest, ground fennel and rosemary, add in some salt and cover the chicken inside and out. We toss in the lemons and the flavor is wonderful and the meat is moist when the chicken comes out of the oven.
Spinach/Artichoke Lasagne with Roasted Tomatoes and Onions
This lasagne has great flavor with spinach, artichokes, cheese and roasted tomatoes and onions. Add meat if you must.

A mix of cabbages, carrots and cilantro with peanuts and our special vinaigrette.
Spring Mixed Green Salad with Dried Cranberries, Blue Cheese and Candied Pecans
Our special dressing of vanilla-fig balsamic and dijon mustard makes this salad different than any other. The dressing perfectly compliments the candied pecans, blue cheese and the sweetness of the dried cranberries. If you don't like cranberries, we can do this with julienned apples or pears instead.
